Diploma of Hospitality Management

The Diploma of Hospitality Management aims to provide students with a broad range of practical skills required in the hospitality industry.  The course also develops management skills to supervisory level.

Areas of Study:Commercial Preparation of Food
This will include the hands-on preparation of all types of food: vegetables, meat and poultry, as well as seafood. You will learn about menu planning and balance. You will become an expert in the preparation of appetizers, main courses, desserts, breads and pastries; as well as buffet food and food which caters for special cultural and dietary requirements.

Kitchen Management
This will include planning and managing menus; managing a safe and hygienic kitchen; menu planning and preparation; managing costs and optimising revenues.

Food and Beverage Service
Learn to distinguish between good and bad service. What makes for “5 star” service? Learn how to manage a five star facility.

Front Office Management
Experience the very best in front office service. Learn about different front of house reservation systems.

General management

Entry Requirements:Diploma programs applicants will have completed Senior High School (Year 12 in Australia or the equivalent in their country of origin). Certificate applicants will have completed Year 11 or equivalent.

International Students: Entry into Certificate and Diploma programs requires an English level, at least equivalent to IELTS 5.5 or Upper Intermediate at a English Language Centre.

This subject introduces a range of cookery methods to prepare menu items for the kitchen of hospitality or catering operations.

Kitchen Studies 1
This subject introduces the students to a commercial kitchen environment and focuses on the elementary skills that relate to kitchen operations.

Food & Beverage Operations 1
This subject introduces food and beverage services to customers in a range of hospitality industry enterprises and takes place in our Billy Blue Brasserie.

Food & Beverage Studies 1
This subject reinforces and develops students knowledge of Food and Beverage operations and acts as a supporting theory component to the practical operations of Food and Beverage Operations.

OH&S and Hygiene for Hospitality Operations
This subject delivers to students the essential knowledge which is required for high standards of hygiene and essential safety practices within the hospitality industry.

Introduction to Business Communication and Management
This subject delivers business communication skills for the Hospitality industry. It focuses on telephone communications, dealing with conflict in the workplace and coaching others in job skills.

Hospitality Information Technology
This subject introduces the role and functions of the Front Office in a commercial accommodation environment and incorporates the practical skills and knowledge required to operate computerised Property Management and Reservation System (Micros Fidelio).

Rooms Division Operations
This subject allows students an insight into the accommodation areas of the hospitality industry. It provides knowledge on house keeping, and how best to manage quality customer service.

Introduction to Sales and Marketing
This subject introduces students to effective sales and marketing strategies with in the Hospitality industry. Student plan, implement, co-ordinate and conduct sales and marketing activities relating to hospitality businesses.

Introduction to Human Resource Management
This subject focuses on the important role of being able to manage a diverse range human resources whilst combining it with daily work operations common to the hospitality industry.

Food and Beverage Operations 2
This subject develops students food and beverage capabilities from a elementary level to advanced whilst working within our Billy Blue Brasserie. There is a greater focus on wine, coffee and food knowledge.

Food and Beverage Studies 2
This is a supporting subject for food and beverage operations and allows students a greater insight into there practical experiences they have in Food and Beverage operations 2.

Introduction to Hospitality Accounting
This subject enables students to interpret hospitality financial operations, and prepare and monitor budgets within a hospitality enterprise.

Hospitality Operations & Risk Management
This subject focuses on Occupational Health and safety aspect of Hospitality operations from a management and leadership view point. Food safety system and risk minimization are also explored.

Hospitality Law
This subjective gives students the ability to be able to develop and update the legal knowledge required for business compliance.

Leadership
This subject focuses on the students ability to be able to lead and manage the hospitality workplace of the future.

Year 2

Hospitality Accounting 2
This subject enables students to develop the skills to put construct an effective business plan and mange the financial operations of a modern hospitality enterprise.

Strategic Marketing Management
This subject focuses purely on the skills required to develop effective strategic marketing plans focusing on Hospitality enterprises.

Business Statistics
This subject analyses market data directly relating to the hospitality sector.

Advanced Human Resource Management
This subject focuses on how best to recruit and select staff and then progresses on to management techniques that can be used to monitor staff performance.

Event Management
This subject allows students an insight into the event management field. Students design and develop event proposals and bids along with developing the procedures and systems required for there effective implementation.

Accommodation Management
This subject focuses on the management of physical assets with in a hospitality enterprise.

Work Placement Tutorial
These tutorials allow students the opportunity to prepare for there Industry placement and explain the academic and college requirements for there industry placement.

Industry Placement (800 hours total in a hospitality environment)
This experience is the capstone to the students 2 years of study. Workplacement allows students to put there learning into practice with in a real life industry environment. Students are required to investigate the business they are partnered with and link there learning from term 4 subjects and produce an invesagative report of the business they are involved with.


Prerequisites

Good passes at Year 11 level or the overseas equivalent plus relevant employment experience.

English language proficiency level of IELTS 5.5, ISLPR 2+, TOEFL 197 (CB), 71 (iBT) or equivalent.

 


Tuition

For 2009: $9,900 per year.

Students should allow $500-600 for a uniform and knife set to be purchased from the Institute's suppliers at the commencement of the course.

Assessment is based on competency ie the ability to perform specific skills and is done through a combination of observation, discussion, written assignments, tests, examinations and/or practical application/work related projects.

Bachelor of Hotel Management

Duration

3 Years. Course commences in February and July each year. Students may also commence the Diploma of Hospitality (Management) in October.

Description

The Bachelor of Hotel Management is a composite course made up of an 18 month Diploma of Hospitality (Management) followed by the completion of 11 Charles Sturt University degree units undertaken over a further 18 months. Students complete the degree within three years and receive two qualifications.

Students who complete specialisations of the Diploma of Hospitality (Management) such as Asian Cookery, Bakery, Culinary, or Patisserie are also eligible to enter this program. Students completing these specialistions will take 3.5 years to complete the diploma and degree

For 2008: $9,800 per year for the first 1.5 years and $11,000 for the final 1.5 years.
For 2009: $9,900 per year for the first 1.5 years and $11,360 for the final 1.5 years.

Students starting this course from one of the specialisations of the Diploma of Hospitality (Management) should refer to the individual diploma for the cost of the course at diploma level.
